Anzac Biscuit Recipe

     1 cup Rolled Oats
     1 ¼ cups Sifted Plain Flour
     ½ cup Caster Sugar
     ¾ cup Desiccated Coconut
     160 g Butter
     2 tbsp Golden Syrup
     2 tsp Water
     1 tsp Bicarb Soda

    Preheat oven to 170 degrees.

    Line 2 baking trays with non stick baking paper.

    Measure out all your ingredients. (don’t forget to sift your flour).

    Place your sugar, flour, oats and coconut into a bowl. Mix it up using a large spoon.

    Turn your stove onto a low heat. Add the butter and golden syrup. You want it to be melted – not boiling.

    Mix the bicarb soda and water together.

    Just as the golden syrup mix has melted, add the bicarb/water mixture. It will slightly bubble, which is normal. Continue to mix.

    Now pour the wet mixture over the dry mixture and stir to combine.

    To make large sized ANZAC biscuits, use a tablespoon to get some of the mixture out.

    Roll it into a ball in your hands then slightly press it flat between your hands.
    Gently place onto the tray.

    Pop in the oven for 10 minutes or until the tops are crispy and golden.
    Remove from the oven and allow to cool down for 20 minutes before eating.
